It's always a win when I can get my husband to eat (and like) food made with whole wheat flour, and this pancake/waffle mix managed to accomplish that. You need only to add one egg and 2/3 cup water per batch since the mix contains both powdered buttermilk and dry skim milk. Each batch (1 1/3 cup mix) yields 6 4" pancakes, although, because we like bigger pancakes, I got four large ones out of that amount. Each bag seems to contain two batches, so expect to use a whole one for a small family.When prepared according to the instructions on the bag, the pancakes are thick and fluffy, but also difficult to cook all the way through without over-browning the exterior. For the remainder in the bag, I will probably add a little more water to thin them a little. I had no problem waiting the ten minutes after mixing (that's what helps make them fluffy) because I went about pre-heating my ceramic nonstick griddle and syrup, as well as setting the table and neatening up the kitchen.The pancakes made from this mix definitely have a whole wheat, whole grain flavor. Despite the name of Oatman Farms, the mix does not contain oats. I appreciate that the ingredient list is short, with everything but the leavening labeled as organic.-- Debbie Lee Wesselmann
