Mesquite Flour Wild-Harvested | Regenerative Organic Certified® | Extremely Limited
Discover the authentic taste of the Sonoran Desert in Oatman Farms Mesquite Flour.
Each June and July we sustainably harvest mesquite pods from wild trees growing on our regenerative farm. Two native varietals, Honey Mesquite (Prosopis glandulosa) and Velvet Mesquite (Neltuma velutina), are milled together to create a flour that reflects the diversity of the desert itself. These ancient trees have nourished the Southwest for thousands of years. Indigenous peoples once gathered millions of pounds annually, sustaining life in an arid landscape. We follow their lead, harvesting respectfully and taking only what the trees freely offer while leaving ample pods for wildlife and natural regeneration. The Process We wash and sun dry our mesquite pods, then hammer-mill them to break through the hard yet flavorful outer shell while keeping all the magic of the the inner beans, to make this unique and distinctive flour. When we mill, the aroma fills the air with notes of honey and caramel, while the flour retains its distinctive desert character.
The Flavor Imagine honey nut cereal meets desert wildflower sweetness. Expect notes of citrus, cinnamon, and even chocolate with warm, earthy undertones. Honey Mesquite leans sweeter and more caramel-forward. Velvet Mesquite brings deeper, almost malt-like complexity. The aroma is intoxicating, so sweet that bees swarm when we mill.
Nutritional Power High in protein (12.4%) and exceptionally rich in fiber (32g per 100g serving). Naturally gluten-free with significant potassium, calcium, and iron. The high fiber content delivers sustained energy with a low glycemic response.
How to Use Add a tablespoon or two to your favorite baked goods- pancakes, muffins, cookies, bread or tortillas - for a completely unique taste. Our mesquite's natural sweetness means you can often reduce or sub for a sugar.
Limited Annual Harvest Harvested each June and July in small quantities. When it's gone, it's gone until next year.

Fresh from the Farm.We stone-mill every Tuesday and Thursday in small batches—just us, the grains, and a whole lot of care. Because we’re a tiny team and everything’s farm-fresh, orders ship according to our milling schedule. Even whole berries hitch a ride on this timeline—it keeps things smooth on our end and fresh on yours. Think of it like waiting for a loaf to rise—worth it for the flavor.

Store in an airtight container in a cool, dark place for up to 3 months.
Want to keep it even fresher? Store in the fridge or freezer to extend shelf life up to 6 months.
Wheat Berries
Keep in a cool, dry, airtight container away from heat and moisture.
When stored properly, wheat berries can stay fresh for up to 6 years.
