WHAT IS SKAGIT 1109 WHEAT?
Classification: Modern hard red winter wheat.  

Skagit 1109 was developed by The Bread Lab in Skagit Valley, Washington, for whole grain use and as a pillar for the local grain economy. It was developed for flavor and high yields for organic farmers. The wheat has a cream color with brown speckles. A distinctive rich wheat taste with subtle caramel, cacao, coffee and nutty notes. Skagit 1109 consists of hundreds of different varieties, allowing the wheat to adapt to its environment. Some refer to it as a “modern non-GMO landrace wheat.” 

Wheat Berry Use:

Wheat berries have a variety of uses in cooking and baking. Home-mill for fresh flour to use in breads and baked goods. When cooked whole, they have a nutty flavor and a chewy texture,  commonly used in salads, soups, or as a side dish. 

We believe in Whole Grains for Whole Lives®, which is why we love wheat berries. The whole, unprocessed wheat berries retains all the good stuff that comes from our farm!

Choose a Size

Choose based on your baking goals: 

  • Go with Whole Grain for maximum nutrition and deep flavor 
  • Try T-85 for balanced artisan baking with good rise and flavor 
  • Use T-65 for versatile bread baking 
  • Opt for T-55 for tender pastries and cakes

Fresh from the Farm.We stone-mill every Tuesday and Thursday in small batches—just us, the grains, and a whole lot of care. Because we’re a tiny team and everything’s farm-fresh, orders ship according to our milling schedule. Even whole berries hitch a ride on this timeline—it keeps things smooth on our end and fresh on yours. Think of it like waiting for a loaf to rise—worth it for the flavor.

How to Store for Peak Freshness

Stone-Ground Flour
Store in an airtight container in a cool, dark place for up to 3 months.

Want to keep it even fresher? Store in the fridge or freezer to extend shelf life up to 6 months.

Wheat Berries
Keep in a cool, dry, airtight container away from heat and moisture.

When stored properly, wheat berries can stay fresh for up to 6 years.
