HIGH FIBER PUMPKIN PANCAKES

Ingredients:
- 1 1/3 cups ROC® Classic White Sonora Buttermilk Pancake & Waffle Mix
- 3/4-1 cup room temperature water
- 1 large egg
- 3/4 cup pureed pumpkin
- 1/4 cup ROC® Oatma Farms Bran
PREP WORK

Prepare the pumpkin (optional): Strain the pureed pumpkin through a sieve to release some of the water, or add it in as is (if adding as is, start with the smaller water amount of 3/4 cup).

Preheat griddle: Heat and butter your griddle.
PROCESS

In a bowl, combine the Pancake & Waffle Mix, egg, pureed pumpkin, and bran.

Start with 3/4 cup water and mix. Depending on how watery your pumpkin puree is, you may need to add more or less water. The mixture should be thick, not watery, but not stiff.

Let sit for 5-10 minutes for the mix to fully hydrate.

Cook as usual on the buttered hot griddle.
